Ingredients

  • 4 medium sweet potatoes, peeled and cut into 1-inch cubes
  • 3 tablespoons honey
  • 2 tablespoons olive oil
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: chopped fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large bowl, combine the sweet potatoes, honey, olive oil, cinnamon, salt, and black pepper. Toss until the sweet potatoes are evenly coated.

  3. Spread the sweet potatoes in a single layer on a baking sheet.

  4. Roast in the preheated oven for 35-40 minutes, stirring halfway through, or until the sweet potatoes are golden and tender.

  5. Remove from the oven and garnish with chopped fresh parsley, if desired. Serve hot.
