How To Make Sweet Potato Potato Salad

Ingredients
- 2 sweet potatoes, peeled and cubed
- 2 potatoes, peeled and cubed
- 1/4 cup mayonnaise
- 2 tablespoons Dijon mustard
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- 2 green onions, chopped
- Salt and pepper, to taste
Instructions

Bring a large pot of salted water to a boil. Add the sweet potatoes and potatoes and cook until fork-tender, about 15-20 minutes. Drain and let cool.

In a large bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, honey, green onions, salt, and pepper.

Add the cooked potatoes to the bowl and toss until well coated. Adjust seasoning if needed.
