How To Make African Sweet Potato Stew Recipe

Serves:

Ingredients

  • 2 sweet potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 carrot, diced
  • 1 zucchini, diced
  • 1 can diced tomatoes
  • 2 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cinnamon
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish
  • Cooked rice or quinoa, for serving

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic and cook until fragrant, about 2 minutes.

  2. Add the sweet potatoes, bell pepper, carrot, and zucchini to the pot. Cook for 5 minutes, stirring occasionally.

  3. Stir in the diced tomatoes, vegetable broth, cumin, paprika, cinnamon, salt, and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes, or until the sweet potatoes are tender.

  4. Serve the stew hot, garnished with fresh cilantro, and alongside cooked rice or quinoa.
