- 2 sweet potatoes, peeled and diced
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 carrot, diced
- 1 zucchini, diced
- 1 can diced tomatoes
- 2 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon cinnamon
- Salt and pepper, to taste
- Fresh cilantro, for garnish
- Cooked rice or quinoa, for serving
Instructions

In a large pot, heat the olive oil over medium heat. Add the onion and garlic and cook until fragrant, about 2 minutes.

Add the sweet potatoes, bell pepper, carrot, and zucchini to the pot. Cook for 5 minutes, stirring occasionally.

Stir in the diced tomatoes, vegetable broth, cumin, paprika, cinnamon, salt, and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes, or until the sweet potatoes are tender.
