How To Make Addictive Sweet Potato Burritos

- 4 large sweet potatoes, peeled and diced
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup black beans, drained and rinsed
- 1 cup cooked white rice
- 1 cup shredded cheddar cheese
- 4 large flour tortillas
- Optional toppings: avocado, sour cream, salsa

Preheat the oven to 400°F (200°C).

Place the diced sweet potatoes on a baking sheet and toss with olive oil. Season with salt and pepper. Roast in the preheated oven for 20-25 minutes, or until tender.

In a large skillet, heat olive oil over medium heat. Add the diced onion and minced garlic. Cook until softened and fragrant, about 5 minutes.
